Chiapas is the southernmost region of Mexico and shares a border with Guatemala to the east and Oaxaca to the west. The Chiapas region is known as the most fertile region in Mexico when it comes to growing coffee; A large part of this is due to the ability of growers to use natural forest cover, with its rich volcanic soil and abundant rainfall, which provide natural shade for coffee. Organic Mexican coffee from Chiapas comes mainly from small growers in the Soconusco region.
Growers work in partnership with a certified mill in Tapachula, which eliminates any defects that may affect the final cup. This organic Mexican coffee has not only protected the environment, but has also helped grow a partnership between the mill and growers, creating a sustainable farm-to-cup chain for all. It is a medium-bodied, intensely flavored, balanced bean where caramelized brown sugar meets rich floral notes and chocolate.
