Coffees from Huehue, located in western Guatemala, have a rich aromatic character with the effect of high altitude. After the harvest, the coffees that are washed and fermented for 8 to 10 hours are left to dry in the sun. Hot winds coming from Mexico not only protect high altitude coffees from frost but also provide a more balanced drying after harvest and make high quality coffee possible.
